Your screen seems to indicate that although there are 16 satellites available you haven't achieved a fix on any of them. If so then that is the source of your problem, and it is your GPS hardware/software at fault.

Yep, I know what the issue is, it's getting the dealer to get it fixed. VAG-COM scans confirm a GPS Antenna fault, but on it's 2nd attempted fix, after replacing the Antenna, they also replaced the wires to the the antenna, still no joy.

My SatNav played up in 2018 and couldn't find any satellites, my Skoda dealer told me they replaced an amplifier located under the GPS aerial been working fine since

So, washed & polished the car last week. Strangely after the polish I lost my radio presets (happens from time to time) but also started getting sat fixes, had them all week!

When (rather than if) it goes again I'll give the roof a rub & see if they return.

I'll give the roof a rub & see what happens, sounds like a loose connection on yours
It's in the garage tomorrow, so I'll let you know what happens

Or, water getting to the aerial connection or the amplifier below the aerial?

So it turns out it was simply a loose connection. Working now, fingers crossed it stays that way..
