Nope,
I don't think you can get them off.
You can buy seat covers with a velcro slit in the top which goes over the headrest and then simply close using the velcro.
Remember to ensure seat covers are side airbag friendly!
I think theses are the ones I bought. But a message to to seller should clear up the headrest slit/velcro question. they are of quite good quality and the drivers one of mine lasted two years before getting a bit thin in the rubbed areas. the other seats lasted into infiniti.

I've got really good seat protectors that I had from a previous vehicle and only just got round to fitting them, think I might have to adapt them to fit! I wonder why they don't come off... I assume some form of safety feature.. who knows.

From the workshop guide:

1.8 Removing and installing the headrest
Removing
– Press the release button -arrow- on the back of the backrest
under the cover.
– Remove the head restraint from the runners.

Oh wow, thanks for this... I'll need to see if i can locate this button.. Just need to figure out if it's on the rear of the sear or the front!

It does work, but it's a bit of a faff. The release button seems to be in the centre of something harder, so you have to find the centre of the hard circle and then press the button in the middle of it.

Once found for the first time, the second time will be easy.

You might have to remove the rear cover of the seat . I’ve not had a look but majority of head rest installs there was circlips on the stems or other things to stop them coming out by pulling and others was just very tight at the ends .

However with newer vag models the plastic groomers at the base of the head rests pop up to reveal extra spring loaded fastenings which you just push in

It was actually really easy... I'll put a few pictures up tonight when I do the other one! You can feel it when you press the fabric in
