I'm surprised nobody has mentioned tyre makes and different treads yet. Whilst I don't imagine Skoda would fit any make of tyre to their new cars that would be particularly noisy, the tyres on your car could be a different make to the ones on the demonstrator, which could make a difference.
We could compile a list. I have experience of these tyres, all quiet:

18" Michelin Latitude Sport
18" Pirelli Scorpion Verde
17" Michelin CrossClimate

The 19” Pirellis are also very quiet. Seriously low road noise is one of the reasons we were so impressed by the Kodiaq.

Our XC40 has 18” Michelin Primacy 4 tyres, and the tyre noise is significantly higher. Obviously not a great comparison of tyres as different car with different levels of sound insulation.

I agree. Pirelli Scorpion Verde on 18 inch rims are not unduly noisy.

The 1.5 TSI engine is exceptionally quiet in the cabin so I find the road noise, though still small, is the 'dominant' sound at low speeds.

Just to confirm for anyone wondering, I’ve just back to backed a 5 seater and 7 seater, both with 19inch rims. The 7 seater did have different tyres (Hancook vs my Pirelli Verde) but I would say beyond much doubt that the increase in road noise is down to the lack 3rd row seats which when folded down, presents a much bigger barrier between the road and cabin and consequently less road noise.

Strange, when the 3rd row seats are up in mine I certainly don’t notice any more road noise.

But even when 'up', the part you sit on is still pretty 'down' and upholstery in general is noise absorbing.

Not really noticed a difference in road noise with either sets of wheels on to be honest
